Recipe: Mini Summer Berry Galettes

When you think of an attractive dessert such as galettes, you might feel overwhelmed + maybe a bit scared to make one. I'm here to say: Relax! It's not as complex as you think. Let's start off with this. What are galettes, exactly? Well, think of a flaky, thin crust that's filled with either savory or sweet concoctions. And I have a Summer Berry Galette recipe that's delicious, fast, and extremely EASY.

This recipe can definitely be considered a "hack". It doesn't require much work + store-bought items are included!

Here's what you need:
Store-bought pie crust
1 cup summer berries (e.g. strawberries, blueberries, raspberries, and/or blackberries)
1/4 cup sugar + 1 tbs. for sprinkling
Lemon zest
2 tsp. cornstarch
Egg wash

Start off by combining your berries, sugar, lemon zest, and cornstarch in a bowl. Set aside. Preheat oven to 350 degrees.

Roll your pie crust dough onto a floured surface. Using a bowl, cut circles from the dough (around 4 inches in diameter).

Add 1/4 cup of berry mixture into each pie crust circle. Try to drain any excess liquid from the berries before adding them to crust. Lift the edges of the circles up and pinch to secure filling.

Brush egg wash over the crust and sprinkle with some sugar. Bake for 15 minutes or until the crust is a golden brown.
